Tagliatelle met courgette en citroen

Hi! I am back after 4 months of not cooking. So glad I can bring you  my favourite recipe that I love so much. It is pasta with zucchini and broccoli. The recipe is originally from Albert Heijn recipes, so therefore is the name in dutch. However I am skipping the meat :)

YOU NEED: pasta, cooking butter, garlic, zucchini, broccoli, whipped cream, lemon


At the beginning I have to warn you, this one is a bit harder to handle. You have to take care of three pots and pens at the same time. It made me so nervous first few times I cooked it. However, don't give up. It is definitelly worth it!

STEP 1: Prepare a big pot and fill it with water. Let it boil. Cut the broccoli into smaller pieces, exactly how you can see at the first picture. When the water is boiling, put broccoli in there - for 5 minutes! No longer, otherwise it will not be good. 


STEP 2: Prepare pot for pasta, boil water and cook pasta according the instructions. 
STEP 3: Prepare pen, put cooking butter and slice two or three cloves of garlic.
STEP 4: Slice zucchini with cheese slicer and then add to pan. 
STEP 5: After few minutes, peel the lemon and then squeeze it. Both, peel and juice, add to the pan. 

STEP 6: Add wipped cream and broccoli to the pan. Mix everything and cook for very last few minutes. 










STEP 7: Serve pasta with sauce.

Kurací šalát (Chicken salad)

Chicken salad for occasions when you are not really hungry. If you are, I recommend to eat with bread.

YOU NEED: salad, lettuce, cucamber, cherry tomatoes, lemon, chicken, salt, pepper, paprika

Step 1: Cut all vegetable and put to a big bowl
Step2: Cut the chicken, salt, peper, paprika and fry on a pen. Add to the salad.

Pangasius na prírodno (Natural Pangasius) (with mashed potatoes)

SOOOOO TASTY - I love that carrot and onion.... YUMMY YUMMY

YOU NEED: pangasius, potatoes  (make mashed potatoes), carrot, onion, zucchini, salt, pepper, oil or cooking butter


Step1: Cut all vegetable. Heat a cooking butter and put onion and carrot to the pan

Step 2: After 2 - 3 mins add zucchini

Step 3: In the meanwhile cut pangasius into smaller pieces and salt and pepper them

Step 4: Add pangasius to the pan, make sure each piece is put directly to the bottom of the pan (move vegetable). After few minutes turn the fish.

Praženica na cibuli (Scrambled eggs with onion)

This is also very easy meal. I bet you don't need a recipe, just to remind this is an option if you are hungry.

YOU NEED: Eggs, (onion), (mashrooms), salt, cooking butter or oil, bread, (ketchup)



Step 1: heat a cooking butter

Step 2: add onion

Step 3: when the onion turns brown, add eggs and stir

Cesnaková polievka (Garlic Soup)

This one is simple and very tasty - for soup lovers. The only soup I was able to cook so far.

YOU NEED: 10 cloves of garlic, 1,9 liter water, 3 cubes of bouillon, 4 potatoes, red paprika, caraway, salt, cooking buttor or oil
Step 1: Use a garlic press for 10 cloves of garlic and fry them on cooking butter or oil for a few second, then quickly add 1,9 l water.

Step 2: Add 3 cubes of bouillon, 2 spoons of red paprika and 1 spoon of caraway, plus some salt.

Step 3: Cut 4 potatoes into small cubes and add the to the soup. Once the potatoes are soft, the soup is done.

Step 4: Soup should be served with croutons. The easiest way is to just buy them ready made in the shop. I tried to prepare them, but it didn't really work out. The recipe is tu put bread on a frying pan and wait until it turns into toast. You can also use a normal toaster. Anyway, if you will use sandwich bread, it will not work, because it is too soft. Best is to use a normal bread (not a soft one) or just buy them.

Step 5: Cut the bread into small cubes and put them in the bowl. Then serve the soup over them.

Nasi Goreng (favourite Dutch meal from Indonesia)

This one is Harmen's meal. It is really tasty one, quick and cheap as well. Very good to eat on a regular basis.


YOU NEED: Chicken meat (one chicken breast per portion), spring onions, normal onion, garlic, soy sauce ("ketjap" at the picture), spicy Sambal Sauce, rice. Optional: Carrots (my addition), chili, also Sambal Sauce can be optional (when I cook, I don't use it at all)


Step 1: Cut the meat into pieces and cook them on the pan. At the same time, prepare rice.

Step 2: Cut the onion and garlic into small pieces (for garlic can be used garlic press)

Step 3: Add the onion and garlic to the chicken once the chicken is all white. 

Step 4: This step is optional. If you like carrot and you want to add it, you can do it now. Simply peel carrots, cut them and add to the pan. 

Step 5: In the meanwhile don't forget to your rice! Once it is done, pour the water. The best way is to set timer for the rice, because you will be probably very busy with the pan. 
Step 6: After like 2 - 3 minutes with carrots on the pan, add soy sauce and cook for like 5-6 minnutes. It will make it all so brown.

Step 7: Add a spoon or two of Sambal sauce and also some chili if you want. Be careful at this step, only that much that you like and are able to eat.

Step 8: Cut the spring onions and add them to the pan. Stir for like 2 minutes.

Step 9: Finally, add the cooked rice and mix everything together.

Špenát s vajcom (spinach with egg)

I never cooked this one before, so it was a bit rush to prepare potatoes, spinach and eggs at the same time. Therefore I didn't have time to take photos, especially because I was coooking alone, so definitelly no time for photos. Anyway, I am adding some links I was following.



YOU NEED: eggs, frozen spinach, potatoes, milk or cream

I didn't use flour neither onion which is recommended in the recipes. I simply defrosted spinach on the oil and then added salt, pepper and a little bit of cream. That was it. I also prepared mashed potatoes and fried eggs.

Vyprážaná ryba (pangasius) so zemiakovou kašou (Fried fish with mashed potatoes)

Again very easy, based on "trojobal" - trio of flour, whipped eggs and bread-crumbs.

WE NEED: pangasius filets, flour, eggs, salt, milk, bread-crumbs, potatoes

Step 1: Prepare "trojobal" - trio mentioned above. The best is to use a deep plates, but unfortunatelly I didn't have them this time. Put flour to the first plate, one or two eggs to the sedonf plate and bread-crumbs to the third plate. To the plate with eggs add a bit of salt and a bit of milk and whisk them simple with fork. Bread-crumbs are usually yellow, but this time I used flavored one with some spices already in it. 
Step 2: If you use deep plates, you don't  have to cut filets into smaller pieces, unfortunatelly I had to. Then roll the piecies of meat firt in flour, then in eggs, then in bread-crumbs and then put to the pan with hot cooking butter or oil. Turn from both sides until it looks like these. 

BONUS: If you have some "trojobal" left and no more meat, you can mix it togehter and prepare some kind of doughnut which you put on pan and fry as well. Perfectly tasty.

Step 3: Prepare mashed potatoes

Pork chop with mashed potatoes

This is Harmen's recipe, very tasty and very easy again :)

YOU NEED: potatoes, pork chop, spicies for pork, cooking butter


Step 1: Start with potatoes - peel them, cut them and boil them

Step 2: Put spicies to meat - from both sides. We used mix spicies speciel for pork. Try to massage it into the meat.
Step 3: Put cooking butter to the pan and wait until is starts bubble

Step 4: Once it is bubbling, put pork at the pan

Step 5: Turn to cook from both sides until it looks like this... nice brown, no red any more...

Step 6: Mash the cooked potatoes
